3 Tbsp | 3 Tbsp | sugar |
4 ½ | 3 | eggs |
3/8 C | ¼ C | melted butter |
2 tsp | 2 tsp | vanilla |
2 ¼ C | 1 ½ C | flour |
¼ tsp | ¼ tsp | salt |
¾ tsp | ½ tsp | baking powder |
¼ tsp | ¼ tsp | baking soda |
4 ½ C | 3 C | milk |
Mix sugar, eggs, butter, and vanilla together in blender
Mix dry ingredients together
Add dry ingredients alternating with milk while blender is continuously running
Cook over medium- med/high heat

Making and eating crepes was a Stay Family tradition before I joined the family. Grandpa Jesse would make them, wearing his white apron and chef's hat, for special occasions like a date. My first time was for a Hawaiian themed dance at BYU the summer of '72. The one rule was that you had to say "yum" or "wow" or "Boy, these are good!" often enough to keep Grandpa cooking. If he didn't hear you, he'd come in to the table and put his hand up to his ear as a subtle reminder.
This recipe - I never got Jesse's -was originally called "Icelandic Pancakes" on a mimeographed paper glued in my messy yellow book. Sister Carol Thorderson (an Icelandic name) taught us how to make these at a RS Homemaking meeting in the Livonia Ward in MI.
