One Pot Cheesy Mexican Lentils, Black Beans, and Rice

Rachel found this recipe at https://reciperunner.com/one-pot-cheesy-mexican-lentils-black-beans-and-rice/ It's delicious. I could eat the whole pot by myself, it goes down so smooth, but it's enough food to feed a family of eight if six of them are kids or teenagers.

ONE POT CHEESY MEXICAN LENTILS, BLACK BEANS AND RICE
yield: 5 SERVINGS
prep time: 20 MINUTES
cook time: 50 MINUTES
total time: 1 HOUR (if you overlap some of the prep time with the cook time)

INGREDIENTS
1/2 of a yellow onion, diced
1 clove of garlic, grated or minced
1/2 cup uncooked long grain brown rice
1/2 cup uncooked French green lentils, rinsed (red or brown lentils may also be used)
2-3 cups low sodium vegetable stock
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground chipotle powder (optional)
Kosher salt and fresh ground black pepper to taste
15 ounces black beans (canned), rinsed and drained
1/2 cup fire roasted tomatoes, drained
4 ounces diced green chiles (canned)
1 small zucchini, shredded
1/2 cup frozen corn, defrosted
1 cup red enchilada sauce
3/4 cup shredded cheese, I used sharp cheddar and part skim mozzarella
Cilantro for garnish (optional)

INSTRUCTIONS
  1. Heat a large pot or saucepan over medium high heat.
  2. When the pot is heated spray with cooking oil and add in the onion and garlic.
  3. Sauté for a couple minutes then add in the brown rice and lentils.
  4. Add in the vegetable stock, stir and bring to a boil.
  5. Once boiling, cover and reduce the heat to low.
  6. Simmer for 30-40 minutes, or until lentils and rice are tender.
  7. If there is any excess liquid drain it.
  8. Season the rice and lentils with salt, pepper, chili powder, cumin and chipotle powder.
  9. Add in all of the remaining ingredients except 1/4 cup of the cheese and stir together.
  10. Heat the mixture until the cheese is melted.
  11. Top with the remaining cheese and cover with a lid.
  12. Heat on low until the cheese is melted and the mixture is bubbly.

summer tomato soup with shrimp, zucchini, and corn

I found this in a magazine last summer and I loved it. I've decided poblanos are my favorite pepper. They're not too hot, but because of them and the onions/garlic you only need to add salt and pepper for seasoning.

INGREDIENTS

  1. 2tablespoons olive oil
  2. 2poblano peppers, seeded and chopped
  3. 1large onion, chopped
  4. 3cloves garlic, sliced
  5. Kosher salt and black pepper
  6. 2small zucchini, chopped
  7. 128-ounce can diced tomatoes
  8. 1pound raw medium peeled and deveined shrimp
  9. 2cups fresh (from 4 ears) or frozen corn kernels, thawed

DIRECTIONS

  1. Heat the oil in a large pot over medium-high heat.
    Add the poblanos, onion, garlic, and ½ teaspoon each salt and black pepper.
    Cook, stirring, until softened, 10 to 12 minutes.
    Add the zucchini and tomatoes (and their juices).
    Cook, stirring, until the zucchini is crisp-tender, 12 to 15 minutes.
    Add the shrimp, corn, and 3 cups water. Bring to a simmer.
    Cook, stirring occasionally, until the shrimp are white throughout
    and the corn is tender, 5 to 6 minutes.
    Sprinkle with black pepper and serve.

Dill Mushroom Rice

I took all the about-to-go-bad ingredients from our fridge this week and put them in a pot with a few other ingredients. Lo and behold, it turned out tasting pretty great! (This is according to Rachel, not just me, so yes you can trust that assessment.)

Ingredients:
One bunch of fresh dill, chopped fine
One bunch of fresh cilantro, chopped rough
One medium brown onion, halved, then sliced the other direction to make a bunch of c-shaped onion pieces
6-8 oz of fresh button mushrooms, sliced

1 medium tomato, smashed
Two cups of white rice
1T butter
2 t vegetable oil
1 bouillon cube, vegetable or chicken (I actually used some leftover packets of flavoring from two kinds of ramen noodles, but I think the boullion cube would approximate it pretty well)
In a separate sauce pan, melt the tablespoon of butter on medium heat
Add the dill, cilantro, and bouillon, then sautee the onions and mushrooms for three minutes.
Add the cooked rice and vegetable oil, and mix well.



Directions:
-Cook the rice

spaghetti sauce



I've been making this for about 4 years, but recently had a dry spell with it while meal planning was an afterthought to a new baby. I made it again last night and was reminded how much I love it, and how worth the effort it is.

1 29oz can diced tomatoes (or whole tomatoes)
1 14.5oz can diced tomatoes or tomato sauce
1/2 an onion (or a whole small/medium one)
5 Tbs butter
a grind of black pepper

1 lb Italian sausage (we like both mild and hot)

optional:
bell peppers, carrots, garlic, herbs (oregano, basil)

  1. Put the butter, half onion, pepper, and tomatoes (and/or sauce), undrained, in a big sauce pan. Add dry herbs or garlic now. 
  2. Bring the tomatoes to a simmer on medium-high heat.
  3. Turn the heat down to medium/low and let it simmer till the butter has incorporated into the tomatoes and the whole thing is saucy, about 30 min. Smash down the tomatoes with your spoon and stir it occasionally.
  4. While the sauce is cooking, cook your sausage and crumble it (take it out of the casings if you can't find ground sausage). Chop your bell peppers or grate a carrot if you're using it.
  5. Dump the cooked sausage into the completed sauce.
  6. Take the onion out of the sauce and chop it up. Add it and your chopped veggies to the pan you cooked the sausage in and fry them for a minute or two. Dump it in the sauce.
  7. Add some pasta water to the spaghetti sauce to make it smoother and stick to your pasta better.
  8. Add any fresh herbs and stir them in.
We like to eat this on thick pasta like cellentani or linguini or fusilli that's had plenty of salt in the water. And freshly grated parmesan is delicious, too.

Slow-roasted Tomato, Cucumber, and Hummus Sandwich

Slow-roasted Tomato, Cucumber, and Hummus Sandwich

INGREDIENTS
whole wheat or multi-grain bread, toasted
hummus
carrot, grated
red onion, thinly sliced
sprouts
slow-roasted tomatoes (recipe below) or tomato, thinly sliced and seasoned with salt and freshly ground black pepper
cucumber, thinly sliced

DIRECTIONS
1. Spread hummus over two slices of bread. On one slice layer grated carrots, red onion, sprouts, tomatoes, and cucumber. Top with the second slice of bread and serve.

Slow-roasted Tomatoes

INGREDIENTS
cherry, grape, or small Roma tomatoes, halved
whole cloves of garlic, unpeeled
extra virgin olive oil
salt and freshly ground black pepper
fresh herbs (optional)

DIRECTIONS
1. Preheat oven to 225 F. Arrange tomato halves on a baking sheet lined with parchment paper. Drizzle with just enough olive oil to make the tomatoes glisten. Sprinkle lightly with salt and freshly ground black pepper and herbs, if using.

2. Bake in preheated oven for about 3 hours (depending on the size of the tomatoes), until the tomatoes are shriveled and almost dry (with a little juice still left inside). Use right away or cool and store in the refrigerator covered in a little olive oil.

Homemade salsa

This is from my friend April Young who lives in Katy, TX.

I use my blender to chop everything up, but a food processor is easiest. Be warned, it makes a ton of salsa.

10 roma tomatoes
1 bunch cilantro
1 white onion
2 jalepeno peppers 
1 Anaheim pepper
2/3 can crushed tomatoes
3 Tbsp garlic salt
2 tsp sugar
Juice of 4 limes or to taste

Mix it all together and serve

Chicken Stew with Butternut Squash and Quinoa

I found this on pinterest, but it (along with the picture) comes from Cookin' Canuck. This was a nice new flavor. Don't skip the olives. You could make this vegetarian by using veggie broth and subbing white beans for the chicken.

Ingredients

  • 1 1/2 lb. butternut squash, peeled, seeded & chopped into 1/2-inch pieces
  • 3 1/2 cups chicken broth
  • 1 1/2 lb. boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 1/2 tsp kosher salt
  • 4 cloves garlic, minced
  • 1 1/2 tsp dried oregano
  • 1 can (14 oz) petite diced tomatoes
  • 2/3 cup uncooked quinoa
  • 3/4 cup pitted and quartered kalamata olives
  • Freshly ground black pepper, to taste
  • 1/4 cup minced fresh flat-leaf parsley

Instructions

  1. Steam the butternut squash until barely tender, about 10 minutes. Remove half of the squash pieces and set aside.
  2. Steam the remaining squash until very tender, an additional 4 to 6 minutes. Mash this squash with the back of a fork. Set aside.
  3. In a large saucepan set over medium-high heat, bring the chicken broth to a simmer.
  4. Add chicken thighs, cover, and cook until chicken is cooked through, about 15 minutes.
  5. Transfer the chicken thighs to a plate and allow to cool. Pour broth into a medium-sized bowl.
  6. Return the saucepan to the stovetop and lower heat to medium. Add olive oil.
  7. Add onion and cook, stirring occasionally, until onion is starting to turn brown, 8 to 10 minutes.
  8. Add minced garlic and oregano. Cook, stirring, for 1 additional minute.
  9. To the saucepan, add tomatoes, butternut squash pieces, mashed butternut squash. Stir to combine.
  10. Stir in reserved chicken broth and quinoa. Bring to a simmer, cover and cook until the quinoa turns translucent, about 15 minutes.
  11. Shred the chicken with your fingers or a fork.
  12. Stir the chicken, olives and pepper into the stew and simmer, uncovered, to heat, about 5 minutes.
  13. Stir in parsley and serve.

Shahi

Another from Manjula.

Shahi Paneer is a very festive main dish that is creamy and rich in flavor. It is usually a special occasion dish. Shahi paneer can be served with any Indian bread, such as naan or with rice.

Recipe will serve 4.*

Ingredients:

  • 1/2 lb paneer (approx. 1-1/2 cups cubed)**
  • 12 cashew nuts
  • 2 tomatoes chopped
  • 1 green chili chopped
  • 1/4 inch of ginger
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds (jeera)
  • 1/8 teaspoon asafetida (hing) [I couldn't find this and left it out]
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 tablespoon coriander powder (dhania)
  • 1/4 teaspoon turmeric (haldi
  • 1/4 teaspoon red chili powder, adjust to taste
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • 1 teaspoon salt, adjust to taste
  • 1/4 teaspoon garam masala
  • 2 tablespoons chopped cilantro (hara Dhania)

Method

  1. Slice paneer into 3/4 inch cubes. Keep aside.
  2. Grind cashews into powder-like consistency. Keep aside.
  3. Puree tomatoes, green chili and ginger. Keep aside.
  4. Add oil in a pan, over medium heat. Shallow fry paneer cubes till they turn slightly brown. Remove from pan and place over paper towels to absorb excess oil.
  5. Increase heat to medium-high and test the oil by adding one cumin seed. If it cracks immediately, the oil is ready.
  6. Add cumin seeds to the oil and as they crack, add asafetida and bay leaves. Stir for a few seconds.
  7. Add tomato puree, coriander powder, turmeric, red chili powder, and paprika. Cook the mixture, stirring occasionally for 2-3 minutes. It will reduce to half its volume and start separating from the oil.
  8. Add sugar, cashew powder and yogurt. Cook for another minute then add 1 cup of water*** and salt and bring to boil.
  9. Add paneer and cover the pan. Simmer for a few minutes over medium-low heat, till gravy is slightly thick in consistency.
  10. Remove from heat, add garam masala and chopped cilantro. Mix gently, cover the pan and let it sit for a couple of minutes.
  11. Shahi paneer tastes best if it is served hot.

*It fed me, Sam, and Anna, not quite 4 adults.
** We used chicken instead of paneer.
***I'd suggest substituting chicken or veggie broth for the water. We liked the final dish, but it tasted watered down.
