Black and Blue Berry Breakfast Cake

Heather made this for us in early July and it was delicious.  A few days ago, Elliott and Ann Nielson gave us some of their blackberries so we thought, "Black AND Blue Berry Cake. . . "  So we added 50% more to the ingredients in the original recipe and cooked it in a 9"x12" pan.

3/4 cup unsalted butter, room temperature
3 tsp. lemon zest or more — zest from 1 large lemon
1 1/2 c + 1 tablespoon sugar**
1 1/2 egg, room temperature (scramble two eggs together: take out a tablespoon of egg [cook it in the microwave for a snack while you finish the cake])
1 1/2 tsp. vanilla
3 cups flour
1 TB baking powder
1 1/2 tsp. kosher salt
2 cups fresh blackberries
1 cup fresh blueberries
3/4 cup buttermilk
** This 1 tablespoon is for sprinkling on top
1. Preheat the oven to 350ºF.  Zest the lemon (put parchment paper over the grater before rubbing the lemon on it, then when you lift off the paper, all the zest comes with it.  No more scraping the grater with a toothpick) Cream butter with lemon zest and 1 1/2 cup of the sugar until light and fluffy.
2. Add the eggs and vanilla and beat until combined. Meanwhile, toss the berries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.
3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the berries.
4. Grease a 9"x12"-inch baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

French Toast Dip-- Anna's first recipe

Anna made this little creation for dipping her french toast tonight. I asked her if I could have some and she shook her head no. I dipped anyway and I was severely reprimanded. And after having tasted it, I can see why. It was delicious! Once I told her how much I liked it and what a fabulous cook she was, she had even more fun mixing and stirring.

Ingredients:

maple syrup
applesauce
cinnamon

Directions:

Mix and dip :)

shrimp, egg, and cabbage fried rice

I had some cabbage and shrimp to use up before moving and made this stuff. It's rich and really yummy. I could have just eaten the cabbage plain as it's prepared here as a side dish.

http://www.foodnetwork.com/recipes/tyler-florence/shrimp-and-egg-fried-rice-with-napa-cabbage-recipe/index.html

Prep Time:
20 min
Cook Time:
10 min

Ingredients

  • 6 tablespoons peanut oil
  • 2 shallots, thinly sliced
  • 1 (2-inch) piece ginger, peeled and grated
  • 1/2 small head napa cabbage, core removed and finely sliced
  • Salt
  • 2 cloves garlic, minced
  • 1/2 pound medium shrimp, peeled and deveined
  • 3 large eggs, lightly beaten
  • 4 cups cooked long-grain white rice
  • 1/2 cup frozen peas, thawed in warm water
  • 3 tablespoons soy sauce
  • 1/4 bunch scallions, sliced, for garnish
  • 1/2 cup chopped peanuts, for garnish

Directions

Heat 2 tablespoons of the peanut oil in a wok or a large nonstick skillet over medium-high flame. Give the oil a minute to heat up, then add the shallots, the ginger, and stir-fry for 1 minute until fragrant. Add the cabbage and stir-fry until the cabbage is wilted and soft, about 8 minutes; season with a nice pinch of salt. Remove the vegetables to a side platter and wipe out the wok with dry paper towel.

Put the pan back on the heat and coat with 2 tablespoons of oil. Add the garlic and to the wok and saute gently until fragrant. Add shrimp and cook for 2 to 3 minutes until pink. Set aside on platter with vegetables. Add remaining oil to the wok and when hot, crack the eggs into the center. Scramble the egg lightly, then let it set without stirring so it stays in big pieces. Fold in the rice and toss with the egg until well combined, breaking up the rice clumps with the back of a spatula. Return the sauteed vegetables and shrimp to the pan along with the peas and season with salt and soy sauce. Toss everything together to heat through. Spoon the fried rice out onto a serving platter, and garnish with scallions and peanuts.

Pad Thai-- Gluten Free

I found this recipe at my friend Marci's dinner blog: On My Menu. She got it from Kill.The.Gluten blog and tweaked it. I like her additions (in italics) and have added my own (*starred*). The ease and deliciousness of this dinner have made it a regular at our house. The photo is from Marci who takes excellent pictures of all her dinners.

Ingredients:
1 box Original Pad Thai
2 boneless skinless chicken breasts, sliced thin---season with 1/2 t. each pepper, garlic salt, onion salt and 1 t. curry---*We have used either 1 lb shrimp or a mixture of shrimp and chicken. The shrimp makes it oh so rich.*
3 Tbsp oil, divided---I use 1/2 sesame oil, 1/2 canola or veggie oil---*I used peanut oil*
1 egg, scrambled (we like 2)
2 green onions, sliced
2 Tbsp cilantro, chopped
1 lime...optional (I forgot tonight and it still tasted great)
2 Tbsp peanuts, coarsely chopped
1/2 c. shredded carrots

Directions:
- Boil 4 cups water. Add the noodles and remove from heat. Let the noodles soak for about 5-8 minutes, then drain and run under cold water.
- In a large skillet, heat 1 Tbsp oil. Add egg(s) and cook until done. Remove the egg, chop, and set aside.
- Add the other 2 Tbsp oil and heat. Add the chicken (and carrots) to the skillet, cooking until just done, about 3-5 minutes. *If you're using shrimp, stir fry it 2-3 min on each side until it's done, then remove until the end. If you over cook them, they'll be rubbery*
-Add the noodles and the sauce packet. Stir fry for a few minutes, or until the noodles are done, adding water if necessary to keep them from sticking to the skillet.
- Add the egg, green onions, cilantro, and squeeze the juice from the lime over the top. Stir for 1 minute and remove from heat.
- Garnish with peanuts. (and some soy sauce if desired)

Doug's Recommended Cold Oriental Noodle Salad

From cooks.com
Says Doug: "This is a good food for summer, where you want cold foods. You cut the scrambled eggs and cucumbers into very thin strips and eat them with chilled noodles. Delicious!"

8 oz. dried somen noodles
1 tbsp. sesame seed oil
1 lb. shrimp, shelled & deveined
1 tsp. oil
1 egg, beaten
1 Japanese cucumber, thinly sliced
Oriental Dressing (see below)

Cook noodles in boiling water 3 minutes, or until tender, stirring occasionally; drain. Place noodles in a large bowl and toss lightly with sesame oil; cover and refrigerate. Cook shrimp in boiling water for 2 minutes. Place in ice water, then pat dry and refrigerate.

In a small skillet heat oil, pour in egg and make a thin sheet of scrambled egg. Cut into strips. Arrange noodles, shrimp, egg and cucumber on serving platter. Accompany with Oriental Dressing.

ORIENTAL DRESSING:

1/4 c. rice vinegar
2 tbsp. shoyu
4 tsp. sesame oil
1 tsp. sugar

Chicken and Egg Fried Rice

Rachel's mom made this while we were there for Thanksgiving. It tasted good and looked really easy to make, so we got the recipe from her. Enjoy!

Nicean's Favorite Fried Rice
Submitted by Holly Hanson

1 to 2 chicken breasts or 10 chicken tenders, cut into small pieces
8 baby carrots, finely sliced
1/2 white onion, chopped
3/4 cup frozen peas
3 cups cooked brown rice (use your favorite method to prepare this)
3 eggs, scrambled & chopped
1 to 2 garlic cloves, crushed or 1 teaspoon of garlic powder
1/2 stick butter, melted

Marinate chicken in soy sauce or if you don't have much time, mix chicken with soy sauce just before cooking. In a large fry pan, cook chicken in small amount of olive oil. Add carots and onion and saute until clear. Add frozen peas and cook until soft.
Add cooked brown rice to the fry pan mixture. Scramble 3 eggs, chop, and add to mixture.
Stir garlic into melted butter and add to the mixture.
Mix together well. Add soy sauce to taste.
