summer tomato soup with shrimp, zucchini, and corn

I found this in a magazine last summer and I loved it. I've decided poblanos are my favorite pepper. They're not too hot, but because of them and the onions/garlic you only need to add salt and pepper for seasoning.

INGREDIENTS

  1. 2tablespoons olive oil
  2. 2poblano peppers, seeded and chopped
  3. 1large onion, chopped
  4. 3cloves garlic, sliced
  5. Kosher salt and black pepper
  6. 2small zucchini, chopped
  7. 128-ounce can diced tomatoes
  8. 1pound raw medium peeled and deveined shrimp
  9. 2cups fresh (from 4 ears) or frozen corn kernels, thawed

DIRECTIONS

  1. Heat the oil in a large pot over medium-high heat.
    Add the poblanos, onion, garlic, and ½ teaspoon each salt and black pepper.
    Cook, stirring, until softened, 10 to 12 minutes.
    Add the zucchini and tomatoes (and their juices).
    Cook, stirring, until the zucchini is crisp-tender, 12 to 15 minutes.
    Add the shrimp, corn, and 3 cups water. Bring to a simmer.
    Cook, stirring occasionally, until the shrimp are white throughout
    and the corn is tender, 5 to 6 minutes.
    Sprinkle with black pepper and serve.

Shrimp Biryani

I got this recipe from an arabic food blog.  It is sooo good. What's in the parenthesis is from me. When I made it, I didn't cook the rice as long because it doesn't take long to cook the kind I bought.  After layering the shrimp and rice, you just want to cook it until it's done.

Ingredients

2 cups basmati rice or 400 g

2 tablespoons vegetable oil

2 medium onion or 250 g, finely sliced (if you want crunchy fried onions, wring out the onions in a towel before frying)

2 medium onion or 250 g, finely chopped

500 g shrimp, peeled, raw, de-shelled & de-veined

2 tablespoons tomato paste

4 cloves garlic, crushed

1 cup fresh dill or 50 g, finely chopped

3 tablespoons curry powder

2 cinnamon sticks

5 whole cardamom pods

3 cubes MAGGI® Chicken Bouillon or 30 g (the bouillon cubes here are bigger so be generous)

½ cup water or 125 ml, hot

2 cups cilantro leaves or 100 g, roughly chopped

6 cups water or 1½ liters

2 tablespoons ghee (or oil)

1 tablespoon saffron, powder (didn't use this as I haven't found it yet and it's very expensive)

pinch of salt

pinch of ground pepper

Preparation

Wash and Soak rice in cold water and set aside for 30 min.

In a large pot, heat vegetable oil, fry sliced onions till golden brown, remove and set aside.

In the same pot on medium high heat fry chopped onions till golden, add shrimp and sauté till pink (about 4-5 minutes), add tomato paste, Garlic, Dill, Spices, Cinnamon sticks, Cardamom pods, MAGGI® Chicken Bouillon , and Water and bring to a simmer. Add chopped fresh coriander leaves and remove from pot and set aside.

In the same pot, bring to boil 1.5 liters of water, place rice and cook until rice is ¾ cooked (andante).

Drain rice in a colander and discard excess water.

Melt Ghee on the bottom of the same pot; add a layer of strained rice, followed by a layer of shrimp and onion mixture and a sprinkle of Saffron powder. Follow this step until all the rice and shrimp sauce is used.

Steam rice and shrimp on med-low heat until rice is fully cooked (about 20 minute).

Gently fluff cooked rice ensuring even distribution of rice and shrimp.


Serve on a large plate, and garnished with fried sliced onions.

Creamy Shrimp Rolls

  1. In a medium bowl, whisk the mayonnaise, lemon juice, ½ teaspoon salt, and ¼ teaspoon pepper.
  2. Fold in the shrimp, celery, and chives, if desired.
  3. Line the buns with the lettuce and fill with the shrimp mixture. Serve with the potato chips.

Shrimp and Sausage with Polenta

  1. Heat the oil in a large skillet over medium-high heat. Cook the sausage until browned, 3 to 4 minutes. Add the shrimp, bell pepper, ½ teaspoon salt, and ¼ teaspoon pepper and cook until the shrimp are opaque, 3 to 4 minutes more. Add 2 tablespoons of the butter and cook until melted.
  2. Meanwhile, in a medium saucepan, bring 3 cups of water to a boil. Whisk in the polenta and cook, whisking, until thickened, 3 to 4 minutes. Whisk in the remaining 2 tablespoons of butter, ½ teaspoon salt, and ⅛ teaspoon pepper. Serve with the shrimp mixture and sprinkle with the oregano.

Seafood Paella

One of the best things we've eaten in weeks. Easy to prepare and different from our usual fare.

I would recommend this in the slow cooker. It was really flavorful that way and I don't think it would be as flavorful with a shorter cooking time.

Also, note that it is 5 TOTAL hours of cooking time, not 4.


Nutrition Facts

Servings Per Recipe 6 servings

Nonstick cooking spray
3/4 cup chopped assorted colored sweet peppers (I used about twice this much)
1/2 cup chopped onion
(I also added some diced carrots)
2 cloves garlic, minced
2-1/2 cups chicken broth
1 cup uncooked regular brown rice
1/2 tsp. dried thyme, crushed
1/4 tsp. crushed red pepper
1/4 tsp. ground turmeric
12 oz. fresh or frozen shrimp in shells, thawed, peeled, deveined, and halved lengthwise
12 oz. tilapia fillets, cut into 3/4-inch pieces
1 cup frozen peas
Directions

1. Coat a 3-1/2- to 4-quart slow cooker with cooking spray; add peppers, onion, and garlic and set aside. In a large microwave-safe bowl combine the broth, rice, thyme, crushed red pepper, and turmeric. Microwave on 100% power (high) for 4 minutes or until just boiling. Pour over vegetables in cooker.

2. Cover; cook on low-heat setting for 4 hours. Stir in shrimp, tilapia, and peas. Cover; cook 45 minutes more, stirring once. Remove cooker from liner; let stand, covered, for 10 minutes (fish should flake, shrimp should be opaque, and rice should be tender). Makes 6 servings.

Stovetop Method: In a large skillet heat 1 tablespoon olive oil over medium heat. Add sweet peppers, onion, and garlic. Cook and stir for 4 minutes or until tender. Stir in crushed red pepper, turmeric and rice. Cook and stir for 1 minute. Add chicken broth and thyme; bring to boiling; reduce heat. Cover and cook for 30 minutes. Add shrimp, tilapia, and peas. Cover and cook for 10 minutes more or until rice is tender, shrimp are opaque, and fish flakes. Remove from heat and let stand 10 minutes.

shrimp, egg, and cabbage fried rice

I had some cabbage and shrimp to use up before moving and made this stuff. It's rich and really yummy. I could have just eaten the cabbage plain as it's prepared here as a side dish.

Ingredients

  • 6 tablespoons peanut oil
  • 2 shallots, thinly sliced
  • 1 (2-inch) piece ginger, peeled and grated
  • 1/2 small head napa cabbage, core removed and finely sliced
  • Salt
  • 2 cloves garlic, minced
  • 1/2 pound medium shrimp, peeled and deveined
  • 3 large eggs, lightly beaten
  • 4 cups cooked long-grain white rice
  • 1/2 cup frozen peas, thawed in warm water
  • 3 tablespoons soy sauce
  • 1/4 bunch scallions, sliced, for garnish
  • 1/2 cup chopped peanuts, for garnish

Directions

Heat 2 tablespoons of the peanut oil in a wok or a large nonstick skillet over medium-high flame. Give the oil a minute to heat up, then add the shallots, the ginger, and stir-fry for 1 minute until fragrant. Add the cabbage and stir-fry until the cabbage is wilted and soft, about 8 minutes; season with a nice pinch of salt. Remove the vegetables to a side platter and wipe out the wok with dry paper towel.

Put the pan back on the heat and coat with 2 tablespoons of oil. Add the garlic and to the wok and saute gently until fragrant. Add shrimp and cook for 2 to 3 minutes until pink. Set aside on platter with vegetables. Add remaining oil to the wok and when hot, crack the eggs into the center. Scramble the egg lightly, then let it set without stirring so it stays in big pieces. Fold in the rice and toss with the egg until well combined, breaking up the rice clumps with the back of a spatula. Return the sauteed vegetables and shrimp to the pan along with the peas and season with salt and soy sauce. Toss everything together to heat through. Spoon the fried rice out onto a serving platter, and garnish with scallions and peanuts.

bacon-wrapped shrimp kabobs

1/2 lb raw shrimp

1 lb bacon

vegetables good for grilling

(We used zucchini, red bell peppers, yellow bell peppers, and green bell peppers. Also good would be red onion, summer squash, small red new potatoes, corn on the cob)

1. Soak some wooden skewers in water for 20 min while you cut up all the veggies
2.Cut the bacon strips in half and wrap it around the shrimp
3. Slide 2-3 wrapped shrimp and some vegetables on the soaked skewers
4. Place skewers on broiler pan and brush with olive oil and sprinkle with cracked pepper and some salt. Or brush with BBQ sauce. Or teriyaki sauce. Or balsamic vinegar and pepper. You get the idea.
5. Broil until done, checking and turning every 4 min. They'll be done in about 8-16 min, depending on how hot your broiler is. Cover them with foil if they're charring, but not cooked through.

Enjoy the amazingly rich flavor combo of bacon and shrimp.

Shrimp, Avocado, and Mango Salsa Quesadillas

I found this book at the Amherst Library while I was home in March. I scanned several pages of it and have tried two or three of the recipes. They have been unusual mixtures of textures and flavors and I've been enjoying it. This is a favorite that we've had a couple times now. If you like this, you should definitely find the book and try some of his others.

1 small, ripe avocado, peeled and pitted
1 Tbsp plus 1 tsp fresh lime juice
1/2 lb large shrimp (about 12) peeled and deveined
1 Tbsp olive oil
1/4 tsp salt
1/2 small ripe mango, peeled, pitted, and cut into 1/4" dice [We use a whole small mango]
2 scallions (white and light green parts), finely chopped
1 1/2 Tbsp finely chopped fresh cilantro
1/2 tsp red pepper flakes
2 All-Purpose flatbreads (page 22 of his book) or 8-inch flour tortillas [We use 6 inch tortillas and with those this recipe makes 4-5 quesadillas]
2 oz Monterey Jack cheese, grated (about 3/4 C)

  • Heat a panini or sandwich press according to instructions [We only have a small George Foreman grill and that works fine for these or other paninis]
  • Place avocado in a small bowl and sprinkle with 1 tsp lime juice. Set aside.
  • Place shrimp in a bowl and add olive oil and salt. Toss to coat. Arrange them on the press and cook until pink and just cooked through (2-3 min)
  • Carefully remove them and set aside. When cool enough to handle, cut into 1-inch pieces
  • Place mango, scallions, cilantro, pepper flakes, and remaining 1 Tbsp lime juice into a bowl and toss to combine.
  • Arrange the avocado in one half of each flatbread. Arrange the shrimp on top of the avocado. Spoon the mango salsa on top of the shrimp. Sprinkle with grated cheese. Fold the flatbreads over.
  • Put the sandwiches on the press, pull the top down and cook until browned and crisp, 3 to 6 min. Remove from press and serve immediately.

Orange Shrimp with Fettuccine

We got this from the Better Homes & Gardens cookbook. I imagine it might taste good cold, too, but we had it hot.

12 oz fresh or frozen peeled and deveined shrimp
6 oz dried fettuccine or linguine (this was far too little for the amount of sauce produced, we thought, so we'd double it to 12 oz. next time)
1 red or green sweet pepper, cut into 3/4 in. squares
1 T cooking oil
1/2 tsp finely shredded orange peel
2/3 c. orange juice
1 T cornstarch
1 tsp chicken bouillon granules
1/2 tsp toasted sesame oil (we just used olive oil)
1/4 tsp salt
1/8 tsp ground red pepper (all we had were red pepper flakes)
6 oz. frozen pea pods, thawed
2 oranges, peeled and sectioned

1. Thaw shrimp and peapods. Cook fettuccine for 8 to 10 min. or till tender but still firm. Drain well; keep warm.

2. Meanwhile, in a large skillet cook sweet pepper in hot oil for 1 to 2 minutes or till crisp-tener. Remove from skillet. Add shrimp to skillet; cook and stir about 2 minutes or till shrimp turn pink. Remove shrimp.

3. Combine orange peel, orange juice, cornstarch, bouillon, sesame oil, salt, and ground red pepper; add to skillet. Cook and stir till thickened and bubbly. Retrun shrimp and sweet pepper to skillet; stir to coat. Gently stir in pea pods and orange sections; heat through. Serve shrimp mixture over fettuccine.

Doug's Recommended Cold Oriental Noodle Salad

Says Doug: "This is a good food for summer, where you want cold foods. You cut the scrambled eggs and cucumbers into very thin strips and eat them with chilled noodles. Delicious!"

8 oz. dried somen noodles
1 tbsp. sesame seed oil
1 lb. shrimp, shelled & deveined
1 tsp. oil
1 egg, beaten
1 Japanese cucumber, thinly sliced
Oriental Dressing (see below)

Cook noodles in boiling water 3 minutes, or until tender, stirring occasionally; drain. Place noodles in a large bowl and toss lightly with sesame oil; cover and refrigerate. Cook shrimp in boiling water for 2 minutes. Place in ice water, then pat dry and refrigerate.

In a small skillet heat oil, pour in egg and make a thin sheet of scrambled egg. Cut into strips. Arrange noodles, shrimp, egg and cucumber on serving platter. Accompany with Oriental Dressing.

ORIENTAL DRESSING:

1/4 c. rice vinegar
2 tbsp. shoyu
4 tsp. sesame oil
1 tsp. sugar
1/2 tsp. dry mustard
1 1/2 tsp. minced ginger
1/2 tsp. minced garlic

Combine all ingredients; mix well. Makes 1/2 cup.

Curried Shrimp


Ingredients:
1-2 lbs Shrimp, the more the better. Use big ones as the little salad shrimp get lost in the sauce. Precooked and frozen are fine. Thaw them out and dry them off before cooking.

½ cup White Flour (skip the flour or use corn starch for GFCF)

2 C uncooked Rice : 4 cups of water : 1 tsp salt

1 large Onion, diced

1 large Green pepper, coarsely chopped up

2-3 cans Tomato Soup

Curry Powder (Red Hot Chili Powder is optional: add this to the tomato soup if you want the curry to be spicy)

1-2 T Sugar

4-6 T Butter

Start the rice cooking first.
Melt the butter in a large frying pan. I use one with a non-stick coating. Add onions and cook just until golden. Meanwhile, dredge the shrimp in flour and then LIGHTLY fry in the butter with the onions. Sprinkle the shrimp liberally with curry powder and lightly with sugar. Fry a bit more, turn over and sprinkle second side with the curry powder and sugar. Add the green peppers just before you add the cans of tomato soup so they are not overcooked. Add water as needed to keep the sauce saucy. Taste the sauce and add more curry and hot sauce if wanted. Cook only until the sauce is all hot and bubbling. Serve over the rice.
You can make this more of a curry by serving it with small dishes containing finely chopped fresh green pepper, raisins, coconut, chunk pineapple, etc.

Cajun Jambalaya Pasta

Prep time: 1 hour

1/2 tsp white pepper
1/2 tsp cayenne pepper
1 1/2 tsp salt
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
2 skinless, boneless, chicken breast halves
1/2 lb large shrimp, peeled and deveined
5 qt. water
6 oz. plain fettuccine
6 oz. spinach fettuccine
(Note: some brands, like Ronzoni, sell a 12 oz. combination plain/spinach fettuccine mix)
2 Tbs olive oil
2 medium tomatoes, chopped
3 small bell peppers, sliced (red, yellow, green, orange, etc.)
1 small white onion, sliced
1 1/2 cups chicken stock
1 Tbs arrowroot or cornstarch
2 Tbs white wine (or white grape juice/chicken stock/vegetable stock)
2 tsp chopped fresh parsley (or 1 1/2 dry flakes)

1. Make a Cajun seasoning blend by combining the white pepper, cayenne pepper, salt, paprika, garlic powder, and onion powder in a small bowl.

2. Cut the chicken breasts into bite-size pieces. Use about one-third of the seasoning blend to coat the chicken pieces.

3. In another bowl, sprinkle another one-third of the spice blend over the shrimp.

4. Start your pasta cooking by bringing 5 quarts of water to a boil over high heat. Add both fettuccines to the hot water, reduce the heat to medium, and simmer for 12-14 minutes or until the pasta is tender.

5. While the fettuccine cooks, heat 1 Tbs of the olive oil in a large frying pan or skillet over high heat. When the oil is hot, sauté the chicken in the pan for about 2 minutes per side or until the surface of the chicken starts to turn brown.

6. Add the shrimp to the pan with the chicken and cook for another 2 minutes, stirring occasionally to keep the shrimp from sticking. When the chicken and shrimp have been seared, pour the contents of the pan onto a plate or into a bowl. Do not rinse the pan!

7. Put the pan back over the high heat and add the remaining tablespoon of oil to the pan. Add the tomatoes, peppers, and onion to the oil. Sprinkle the veggies with the remaining spice blend and sauté for about 10 minutes or until the vegetables begin to turn dark brown or black.

8. Add the chicken and shrimp to the vegetables and pour 3/4 cup of the chicken stock in the pan. Cook over high heat until the stock has been reduced to just about nothing. Add the remaining 3/4 cup of the stock to the pan. The liquid should become dark as it deglazes the pan of the dark film left by the spices and cooking food. Stir constantly, scraping the blackened stuff off the bottom of the pan. Reduce the broth a bit more, then turn the heat down to low.

9. Combine the arrowroot with the wine (or substitute) in a small bowl. Stir until it is dissolved. Add this to the pan and simmer over low heat until the sauce thickens slightly.
