One Pot Cheesy Mexican Lentils, Black Beans, and Rice

Rachel found this recipe at https://reciperunner.com/one-pot-cheesy-mexican-lentils-black-beans-and-rice/ It's delicious. I could eat the whole pot by myself, it goes down so smooth, but it's enough food to feed a family of eight if six of them are kids or teenagers.

ONE POT CHEESY MEXICAN LENTILS, BLACK BEANS AND RICE

Creamed Polenta with White Beans and Spinach

Recipe and Image from http://www.makeandtakes.com/creamed-polenta-with-white-beans-and-spinach

Creamed Polenta with White Beans and Spinach
adapted from delightful delicacies
makes 4 servings
Ingredients:
For polenta:
4 cups water, plus more if necessary (can use 2 cups milk for part of the water)
1 cup instant polenta* (just use corn meal)
1/2 tsp. sea salt
1 Tbsp. butter, or olive oil
1/4 cup grated parmesan or romano cheese
2-4 Tbsp.  heavy cream
For white beans:
2 cups cooked (or canned) white beans, drained
1-2 tsp. extra virgin olive oil
1 small onion, diced
2 Tbsp. chopped black olives (about 8 large)
1 Tbsp. oil-packed sun-dried tomatoes, drained and chopped
1/2 tsp. fennel seeds (optional)
1/4 tsp. each: dried rosemary, thyme, basil, oregano
red pepper flakes, to taste
salt and pepper
2 cups baby spinach, roughly chopped (kale, chard, or collards)
Water
Heather's note: THIS NEEDS BACON! Crumble some on top and you'll be happy you did.
Instructions:
For polenta:
Bring the water (and any milk, if using) to a simmer in a 3 quart saucepan or pot. Add the salt and slowly whisk in the polenta. Cook on medium heat for about 10 minutes, or until it has thickened and starts coming away from the side. (If you like a thinner, soupier polenta, add more water or extra milk.)
Remove the pot from the heat. Stir in the butter, nutritional yeast or cheese, coconut or heavy cream, and taste. Add more salt if needed. Transfer to a bowl and keep warm until ready to serve.
For beans:
Heat the olive oil in a skillet and add the onion. Cook over medium heat for about 5-10 minutes, or until the onion starts to turn golden. Add the olives, sun-dried tomatoes, fennel seeds, and dried herbs. Continue cooking for a few minutes until onions are completely cooked and the flavors have melded. Add the beans and bring to a simmer. If the skillet is too dry, add a little water. Right before serving, remove the skillet from the heat and add the spinach. (You don’t want to overcook the spinach, just wilt it. If you’re using another heartier green, then cook for a few minutes until the greens are tender.)
To serve:
Spoon some of the polenta into a shallow bowl. Top with the beans and spinach. Serve hot.

Pinto Beans and Rice

1 (1 lb) bag dried pinto bean
1/3 cup picante sauce
2 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon garlic , minced (kind in jar is okay)
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
3 bay leaves
1 cup cooked white rice (we found that it needs about twice this much.  So I cook 1 cup of uncooked rice.  Brown rice also works)

Rinse beans in colander.  Put in a crock pot (or large pot).  Cover with water, plus about 2 inches over top of beans. Add all ingredients, except rice.

Cook on high in crock pot about 4 hours til tender. (Crockpots vary greatly on cooking times. It could take much longer in yours, so the first time allow longer to cook and then you will know how long cooking time will be in the future.).

(Add water if necessary) May also cook on low overnight.
Add rice and cook until rice is warm.

Black Beans and Rice

Ingredients
1 cup black beans
1 Tbsp olive oil
2 garlic cloves, crushed
1 15 oz. can diced tomatoes
1 tsp ground cumin
Salt/Pepper
1 cup brown rice

Directions
Cook beans either by soaking overnight (which I never remember to do) or by the hot soak method.

Cook rice.  When rice is cooked add all other ingredients and heat through.

This was originally a slow cooker recipe, so you can put the beans in the slow cooker after soaking and add the other ingredients except the rice.  Cook on high for about 4 hours.  You'll probably need to add some water, but don't add too much, because you'll just be stirring in the cooked rice and you don't want it too soupy.  When beans are cooked, add cooked rice.

Louisiana Red Beans and Rice

Here is a recipe, along with the following few, that we found to use up our food storage before we moved.

1 large onion, diced small
2-3 tsp. olive oil
1 T minced garlic
1 T Creole Seasoning (recipe below)
1 tsp. dried thyme
1 tsp. dried oregano
salt and black pepper to taste (I didn't use salt because the creole seasoning has salt, and I only used a little bit of pepper)
4 cups cooked small red beans (or use 3 cans red beans, rinsed and drained and add 1/2 cup more chicken stock)
3 cups diced lean ham or Louisiana Hot Sausages (dice into pieces about the size of the cooked beans)
3 cups homemade chicken stock or canned chicken broth
1 T Worcestershire sauce
1 tsp. green Tabasco (or use a smaller amount of red Tobasco)
2-3 bay leaves
1 tsp. red wine vinegar

3 cups cooked white rice for serving

If using dried beans, soak overnight and cook on stove until they are fairly soft, or cook in pressure cooker about 25 minutes. Drain beans. If using canned beans, rinse with cold water until no more foam appears, then drain.

Cut ham or sausage into small pieces, about the size of cooked beans.

Heat olive oil in a heavy frying pan, then saute diced onion about 5 minutes, or until onion starts to brown. Add garlic and saute 1 minute, then add Creole Seasoning, dried thyme, and dried oregano and saute 1-2 minutes more.

Put onion mixture into small crockpot. Add cooked beans and diced ham or sausage. Add stock, Worcestershire sauce, Tabasco sauce, bay leaves, and red wine vinegar, and stir to combine.

Cook on high for 4-8 hours, until the beans are dissolved as much as you prefer. I like this best when the beans are at least 3/4 broken apart and dissolved into the liquid. Canned beans are usually softer and will break apart more quickly.

Serve hot, topped with white rice.

Creole Seasoning
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon cayenne pepper
  • 3/4 teaspoon paprika
  • 1/2 teaspoon salt

Quinoa with Black Beans and Corn

photo from whatsonmymenu.blogspot.com

Ingredients:
• 1 onion, chopped
• 3 cloves garlic, peeled and chopped
• 3/4 cup uncooked quinoa
• 1 1/2 cups broth*
• 1 teaspoon ground cumin
• 1/4 teaspoon cayenne pepper
• salt and pepper to taste
• 1 cup frozen corn kernels
• 2 (15 ounce) cans black beans, rinsed and drained
• 1/2 cup chopped fresh cilantro

*I like the flavor of chicken broth, but if you want to make this meal vegetarian, use vegetable broth or water.

Directions:

1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2. Mix quinoa into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
4. Use this the way you would use any taco filling: in taco shells, tortillas, or on salad topped with lettuce, tomato, avocado, cheese, and sour cream.

Refried Beans from scratch

1 small onion, peeled and halved
3 cups dry pinto beans, rinsed
1/2 fresh jalapeno pepper, seeded and chopped
2 tbs minced garlic
2 tsp salt
1 3/4 tsp fresh ground black pepper
1/8 tsp cumin, optional
9 cups water

Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on high for 8 hours, adding more water as needed. Note: if more than 1 cup water has evaporated during cooking, then the temperature is too high.

Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher or hand mixer, adding the reserved water as needed to attain desired consistency.

Beans may be frozen in portions and thawed to use at a later date.

"Minestrone" Soup

I got this recipe from my History of Food professor, Jim Faulconer, in London 2005. He calls it minestrone, but it is nothing like any other minestrone I've ever had and everything like every Italian wedding soup I've ever had. Either way, it's really good. You could substitute some kale for the spinach if you wanted.

serves 4-6

2 T olive oil
1/4 lb Italian sausage, diced
1 medium onion, diced
2 ribs celery, diced
3 large cloves garlic, crushed and minced
1 medium zucchini, diced
1 bay leaf
1 can white beans
1 can garbanzo beans/chick peas
salt and pepper
8 C chicken stock
1 C small shell pasta
1/2 lb green beans, trimmed and cut into 1 inch pieces
10 oz spinach, clean and coarsely chopped (any dark greens work)
1/2 C freshly grated Parmigiano-reggiano or romano cheese, plus extra for topping
12-16 leaves fresh basil, cut into a chiffonade-- substitute 1/4 C chopped parsley if necessary (don't tell Jim, but we used dried basil. just know fresh is way better)

Heat a soup pot over medium high heat. When the bottom of the pot is hot, add the olive oil and turn the pan to distribute the oil.

Saute the sausage for two minutes.

Add the onions, celery, garlic, zucchini, and bay leaf.
Season with salt and pepper to taste and saute for 5 minutes, stirring frequently.

Add white beans, garbanzo beans, and chicken broth.
Cover and bring to a boil.

Add pasta and green beans to the boiling broth, and cook 8 minutes or until pasta is barely tender.

Stir in the spinach. When it is wilted-- about 1 minute-- stir in the grated cheese.

Ladle soup into bowls and top each bowl with a bunch of basil chiffonade or chopped parsley.

Southwest Pasta Salad

Sam's mom gave me this recipe and I love it. It's really easy to make and is great for potlucks. But be aware, the whole recipe makes a ton of salad. If I'm just feeding our family, I half the recipe and we still have leftovers. Anna likes it warmed.

I put *asterisks* around ingredients I usually leave out and {brackets} around ingredients I like to add

SOUTHWEST PASTA SALAD

Cook 1 pound tricolor pasta until al dente; do not overcook

In a large bowl, combine the pasta with

½ cup finely chopped red onions

*½ green pepper, finely chopped*

1 cup frozen or canned corn(I just use a whole can of corn)

¼ cup chopped fresh cilantro

1 small can chopped green chili peppers (sometimes I leave these out and it's still good)

1 15 oz. can kidney beans, or black beans rinsed and drained (I still use the whole can, even when I half the recipe)

4 ounces cubed or shredded cheese (cheddar, taco mix, or colby jack works well)

{half to a whole avocado}

{one or two tomatoes, or some salsa}

{one or two whole green onions}

{chopped black olives}

{some chicken that I stir fried in garlic powder, chili powder, and oregano)

Whisk together these sauce ingredients in small bowl and then pour over those in the large bowl

3 Tbsp olive oil

3 Tbsp chicken or vegetable broth

5 Tbsp white-wine vinegar

3 Tbsp tomato sauce (or spaghetti sauce)

2 cloves minced garlic

1 Tbsp chili powder

1 tsp salt

1 tsp dried oregano

Layered Chicken and Black Bean Enchilada Casserole

Photo and recipe originally from The Sisters Cafe

I usually have another layered bean casserole I make, but I liked this one a lot more.

Layered Chicken and Black Bean Enchilada Casserole

2 cups diced chicken breast meat
½ tsp ground cumin
½ tsp ground coriander
2 Tb chopped fresh cilantro
1 (15 oz) can black beans, rinsed and drained
1 (4.5 oz) can diced green chili peppers, drained
1 (10 oz) can red enchilada sauce – MILD
8 (6 inch) corn tortillas
2 cups shredded Mexican blend cheese
1 (8 oz) container sour cream

1. Preheat the oven to 375°.
2. Heat a large skillet over medium heat, and spray with vegetable cooking spray.
3. Sauté chicken with cumin and coriander until chicken is cooked through. Transfer to a medium bowl.
4. Stir in the cilantro, black beans, and green chili peppers.
5. Spread half of the enchilada sauce over the bottom of an 11x7 inch baking dish. Place 4 tortillas over the sauce, overlapping if necessary. Spoon half of the chicken mixture over the tortillas, and sprinkle with half of the cheese and half of the sour cream.
6. Spoon the remaining enchilada sauce over the cheese, and make another layer of tortillas. (I put the tortillas down, spread on the sour cream and then added the rest of the enchilada sauce)
7. Layer the remaining chicken mixture over the tortillas.
8. Cover dish with a lid or aluminum foil. Bake for 30 minutes in the preheated oven.
9. Remove the cover, and sprinkle the remaining cheese over the top and dot with sour cream. (See step 6) Continue cooking, uncovered, for an additional 5 to 10 minutes, or until cheese melts.
10. Let stand 10 minutes before serving.

Lone Star Steakhouse Black Bean Soup

2 15 ounce cans black beans
1/4 cup diced red onions
2 teaspoons chopped pickled jalapeno slices
1 teaspoon sugar
1 teaspoon cider or wine vinegar
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon chili powder

Garnish
4 teaspoons chopped red onion
6-8 jalapeno slices
1 tablespoon sour cream

Pour the canned beans along with the liquid into a medium saucepan. Add the remaining soup ingredients and mix. Bring the soup to a boil, then reduce the heat to low and simmer, covered, for about 1 hour, adding water if necessary or until it's as thick as you like.

This makes enough for 2 generous servings, but we made a rice dish to go with it and it fed us for two days. It's also easy to double.

The soup itself isn't too spicy. So if you don't like things too hot, then don't garnish with jalapenos. The sour cream will calm down anything that's too hot for your liking. The recipe suggests adding fresh cilantro while simmering and/or as a garnish. You could also garnish with shredded cheese.

Roasted Red Pepper, Corn & Garbanzo Bean Salad

Prep time: 1 hr (but only because it's served chilled--if you've refrigerated all the ingredients, you can make it in about 10 minutes and serve it immediately)

2 cans (15 oz. each) garbanzo beans
1 jar (16 oz.) roasted red pepper salsa
1 cup frozen whole kernel corn, thawed and drained (from a can works, too)
2 green onions, thinly sliced
8 leaf lettuce leaves
Fresh tomato wedges and sunflower sprouts (optional/garnish)

Rinse and drain beans well; place in 2 qt. casserole dish. Add roasted red pepper salsa, corn and onions; stir to combine. Cover and refrigerate 1 hr. or up to 24 hrs.

To serve, line serving platter with lettuce. Spoon bean mixture over top. Garnish with tomatoes and sprouts, if desired.

Makes 8 servings
