Mom's Roasted Costco Chicken Soup

 

Mom’s Roasted Costco Chicken Soup

This is a long and fairly complicated recipe, but makes two huge meals or more.

These directions are for egg free and GLUTEN FREE chicken and rice soup, but I LOVE this soup with fat, German spaetzle dumpling/noodles.  I like Bechtle brand.

To make the soup, I first roast a Costco chicken a second time with lots of root vegetables: the leftovers go into the soup.

 

Here is a shopping list

1. Costco chicken

2 large onions

Celery (I use about 5 stalks)

Jar of chicken Better Than Bouillon 

Carrots (1-2 lb of nubbies or more)

1-2 lbs small new potatoes 

2 yams or sweet potatoes 

1 large apple

Butter

Rice or noodles

First reroast the chicken and veggies:

 

Take the elastic off the chicken 

Slice I onion:put half on bottom of big soup pan (at least 8 deep x 12” across) on top of olive oil or butter. This helps insulate the chicken and keep it from overcooking on the bottom.  Peel and core apple and put chunks of apple and onion inside the chicken.  Save the peels for the broth.

Cut potatoes and sweet potatoes in half and surround the chicken. Dump carrots on top. Put 1/2 cup hot water in Costco chicken bag to dissolve juices and gelatin in bag and pour that over chicken and veggies. 

Put lid on pan

Roast at least 3 hours at 325 degrees (or 5 hrs at 300)

When ready, carefully lift everything out of pan: chicken will practically fall apart. 

To make gravy, put onions and apples from the stuffed chicken in a blender, along with all pan juices. Add 1-2 cups hot water into pan to get drippings. Add that to blender along with 1/2 peeled cooked sweet potato Add I tbsp corn starch for each cup of gravy makings. Blend well and pour back into the pan the chicken was roasted in and cook until thickened.

Serve.

 

 Now to make the soup: 

 

Strip all the leftover meat off the roasted chicken.  Keep all the bones, skin, etc to make broth.

Next step is to put the entire carcase, skin, etc of the roasted chicken in the pot you roasted it in and made gravy in: you don't even need to wash it first.

You can add things like the tops of the celery, or potato skins or old carrots or old apples to the broth. Cover with water.

Simmer the bones, etc for at least 3 hours or more.

Using a sieve or strainer, pour the broth into a clean bowl or pot.  Throw away all the bones, skin, boiled veggie parts, etc.  I put them all in a plastic grocery bag to keep the trash neater and lessen the probability of some animal trying to get into the trash.

Chop up the 2nd onion and as much celery as you want in the soup. In the soup pan, melt 2 tbsp butter or olive oil and cook the celery and onion in the fat until it is translucent.

Next,  add the broth you made to the onion and celery and at least 1 cup of uncooked rice  (or noodles) to the broth and simmer.  When the rice (or noodles) is tender, chop up all the leftover veggies and as much chicken as you want. Add meat, veggies and leftover gravy to the soup and simmer for about 1/2 hour, adding water if needed.  Now test for flavor: if you want more flavor, add Chicken flavor Better than Bouillion one tablespoon at a time until the soup tastes good.  Add freshly ground pepper to taste.

White Chicken Chili

 



Ingredients

4 servings

3

Tbsp. unsalted butter

2

Tbsp. extra-virgin olive oil

1

medium onion, finely chopped

4

garlic cloves, thinly sliced

1

lb. ground chicken, preferably dark meat

1½

tsp. Diamond Crystal or 1 tsp. Morton kosher salt, plus more

1

tsp. chili powder

1

tsp. ground cumin

½

tsp. ground coriander

Freshly ground pepper

2

4-oz. cans diced green chiles

2

15.5-oz. cans white beans, rinsed

3

cups low-sodium chicken broth

Sliced avocado, sour cream, cilantro leaves, sliced jalapeƱos, corn chips, and lime wedges (for serving)

Preparation

  1. Step 1

    Heat 3 Tbsp. unsalted butter and 2 Tbsp. extra-virgin olive oil in a large Dutch oven or other heavy pot over medium-high until butter is melted. Cook 1 medium onion, finely chopped, and 4 garlic cloves, thinly sliced, stirring occasionally, until onion is softened, 4–6 minutes. Add 1 lb. ground chicken, preferably dark meat, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, 1 tsp. chili powder, 1 tsp. ground cumin, and ½ tsp. ground coriander; season with freshly ground pepper. Cook, stirring often and breaking up chicken with a wooden spoon, until combined and chicken is no longer pink, 3–4 minutes. Add two 4-oz. cans diced green chiles and cook, stirring often and continuing to break up chicken, until chicken is cooked through, 2–3 minutes. 

    Step 2

    Add two 15.5-oz. cans white beans, rinsed, and 3 cups low-sodium chicken broth to pot and bring to a boil. Reduce heat and simmer, stirring occasionally and mashing some of the beans with spoon, until flavors are melded and chili is slightly thickened, 8–10 minutes. Taste and season with more salt and pepper if needed.

    Step 3

    Divide chili among bowls and top with sliced avocado, sour cream, cilantro leaves, sliced jalapeƱos, and corn chips. Serve with lime wedges for squeezing over.

Creamy Chicken Zoodles

I made this while Randy and Rebecca visited and we all (the adults and most of the kids anyway). 

 INGREDIENTS

1 tablespoon butter

1 1/2 lb skinless chicken thigh fillets , cut into strips

4oz fresh semi-dried tomato strips in oil , chopped *See Notes ( I usually can't get this - seems to always be out of stock, so I just do the full 7-8 jar of sun dried tomatoes in oil, adding only the 1 tbsp of the oil as recommended)

3.5oz jarred sun dried tomatoes in oil , chopped

4 cloves garlic , peeled and crushed

1 1/4 cup thickened cream , reduced fat or full fat (or half and half)

1 cup shaved Parmesan cheese

Salt to taste

Dried basil seasoning

Red chilli flakes

2 large Zucchini (or summer squash), made into Zoodles (use a vegetable grater if you don't have a Zoodle grater)


INSTRUCTIONS

Heat the butter in a pan/skillet over medium high heat. Add the chicken strips and sprinkle with salt. Pan fry until the chicken is golden browned on all sides and cooked through.


Add both semi-dried and sun dried tomatoes with 1 tablespoon of the oil from the jar (optional but adds extra flavour), and add the garlic; sautĆ© until fragrant. (While the chicken is browning, prepare your Zoodles with a Zoodle maker OR with a normal vegetable peeler. Make sure to squeeze the zucchini in a towel after shredding, otherwise it gets really runny in the end. I don't have a zoodle maker so I just shred in my food processor. i don't know if you'll need to squeeze the zoodles if you make it like that.)


Lower heat, add the cream and the Parmesan cheese; simmer while stirring until the cheese has melted through. Sprinkle over salt, basil and red chilli flakes to your taste.


        Stir through the Zoodles and continue to simmer until the zoodles have softened to your liking (about 5-8 minutes) and serve.


NOTES

*If you can't find semi-dried tomato strips (usually found in a deli), sub with extra jarred sun-dried tomatoes

Doug's fancy chicken soup for lazy people

Ingredients:
1 package chicken flavored instant ramen
1 scoop Cape Cod Chicken Salad (from Costco)

Put water, noodles, flavor packet, and the scoop of chicken salad in a pot and boil it until the noodles are soft enough. It has chicken, oil, celery, cranberries, and walnuts. All of which are good in chicken soup!
It's kind of similar to the orange chicken soup recipe, but doesn't require any crazy things like putting an entire chicken in a pot and waiting for the flesh to fall of its bones, or peeling carrots or anything at all, really.

Orange Chicken Soup

Mike and Miriam made Orange Chicken soup with cranberries and almonds for us years ago.  I love it and make it a couple of times a year.
This week I made it - well, with alterations using leftovers from Sunday dinner since we are leaving for Macedonia this week and don't want leftovers in the refrigerator - for a Frankfurt Senior Missionary FHE.
Everyone wanted the recipe, so I typed it up and decided to post it here.

Orange Chicken soup
Put a chicken in a pot, covered with water.  Add some chopped up celery and onions.
Cook until the chicken falls off the bones.  Strain off and keep the liquid. Debone the chicken and cut the chicken pieces up into bitesized pieces.  Toss out the celery and onions and all the chicken bones, gristle and skin.
Meanwhile, boil some chunky pieces of potatoes and carrots in chicken broth until tender (or use leftover potatoes and carrots from dinner on Sunday like I did).
Next, coarsely grate 4 peeled carrots. Add to the broth.  Chop up an onion.  Add to the broth.  Chop up 6 stalks of celery.  Add to the broth.  Add one package of dry chicken noodle soup with tiny noodles.  Add 2 tablespoons of chicken soup base.  Add one half of a package of spaetzle  or kluski (polish) noodles: cook only until tender. DO NOT OVERCOOK THE NOODLES or they will turn to mush. 
Next add 3-4 Tablespoons of Stephens’ Orange cider mix (or more to taste). Add some pepper.  Add the cut up chicken and heat it all through.
If you cook the noodles separately in water, then you can add them just before you are ready to eat the soup.


An alternative version of this leaves out the carrots and potatoes.  You add sliced almonds and dried cranberries instead for a really great unusual soup.

Chicken Gyros

I got this recipe here. Big E declared that the chicken "was the best chicken I've ever had!" and the last two times we've had this, that's almost all he's eaten.  

Ingredients:
Tzatziki sauce:
1 cup plain Greek yogurt
1 regular cucumber, peeled and seeded
1 teaspoon minced garlic
1 teaspoon white wine vinegar
Salt and pepper
Squeeze of fresh lemon juice
Extra virgin olive oil

For the chicken:
2 teaspoons minced garlic
Juice of 1 lemon (2-3 Tablespoons)
2 teaspoons red wine vinegar
2 Tablespoons extra virgin olive oil
2 heaping Tablespoons plain Greek yogurt
1 Tablespoon dried oregano
Salt and pepper
1 1/4 lbs. boneless, skinless chicken breasts

To assemble: Pita bread
Fresh tomatoes, seeded and diced
Red onion, sliced thin

Instructions:
Shred the cucumber or chop in food processor. Wrap in a towel a squeeze to remove as much water as possible. Mix together the yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil.

Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

Cook the chicken as desired, either in the skillet or with the broiler. Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips. Heat pitas. Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.

Savory Mustard Chicken Thighs

preheat your oven to 450ĀŗF

mix together:
1/2 cup of dijon mustard, 
1/4 cup of maple syrup, 
1 tablespoon of rice/rice wine vinegar. 

Salt and pepper 1.5 lbs chicken thighs

Then pour the mustard/syrup mix over the chicken in a foil-lined baking dish

Put the chicken thighs into the oven, and let them bake for 40 minutes or until a meat thermometer reads 165ĀŗF. Baste the tops of the chicken with more sauce half way through.

Let the chicken rest for 5 minutes before serving. Plate the chicken, making sure to spoon some extra sauce over the top. Sprinkle over some fresh rosemary.

We served this with some seasoned brown rice and vegetables.

P.F. Chang's Chicken Lettuce Wraps

Ingredients
3 tbs oil
2 boneless skinless chicken breasts
1 cup water chestnuts
2/3 cup mushrooms
3 tbs chopped onions
1 tsp minced garlic
4-5 leaves iceberg lettuce

Special Sauce
1/4 cup sugar
1/2 cup water
2 tbs soy sauce
2 tbs rice wine vinegar (we used half rice vinegar and half red wine vinegar)
2 tbs ketchup
1 tbs lemon juice
1/8 tsp sesame oil (we used olive oil)
1 tbs hot mustard (we used dijon)
2 tsp water
1-2 tsp garlic and red chile paste

Stir Fry Sauce
2 tbs soy sauce
2 tbs brown sugar
1/2 tsp rice wine vinegar (same as above)

Directions
Make the special sauce by dissolving the sugar in water in a small bowl. Add soy sauce, rice wine vinegar, ketchup, lemon juice, and sesame oil. Mis well and refrigerate this sauce until you're ready to serve. (This is very runny and so we put it in a pot on the stove and added some cornstarch to thicken it a little and we liked it like that.)

Combine the hot water with the hot mustard and set this aside as well. (We just added this to the special sauce in the beginning.)

Eventually add your desired measurement of mustard and garlic chile sauce to the special sauce mixture to pour over the wraps. (We also added the garlic chile paste to the special sauce in the pan all together with everything else.)

Bring oil to high heat in a wok or large frying pan. SautƩ chicken breasts for 4 to 5 min per side or until done. Remove chicken from the pan and cool. Keep oil in pan and keep hot.

As chicken cools, mince water chestnuts and mushrooms to about the size of small peas.

Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice wine vinegar together in a small bowl.

When the chicken is cool, mine it as the mushrooms and water chestnuts are. With the pan sill on high heat, add another tbs of oil. Add the chicken, garlic, onions, water chestnuts, and mushrooms to the pan. Add the stir fry sauce to the pan and sautƩ the mixture for a couple of minutes then serve it in the lettuce "cups". Top with Special Sauce.

Thai Peanut Satay

Ingredients
2 pounds Boneless Skinless Chicken Breast, Cut Into Bite Size Pieces

FOR THE MARINADE:
4 Tablespoons Low Sodium Soy Sauce
4 Tablespoons Lime Juice
2 Tablespoons Vegetable Oil
2 teaspoons Cumin
4 teaspoons Coriander
2 teaspoons Turmeric
_____
FOR THE PEANUT SAUCE:
2 Tablespoons Vegetable Oil
⅓ cups Onion, finely chopped
2 teaspoons Chili Powder
5 Tablespoons MARINADE
¼ cups Brown Sugar, Packed
½ cups Water, Or More If Needed
1 cup Creamy Peanut Butter, Do Not Use Natural Or Low Fat
1 whole Lime, Cut Into Wedges, For Garnish
1 bunch Fresh Cilantro For Garnish, Chopped

Preparation Instructions
1) Combine all marinade ingredients and whisk well to combine. Reserve 5 tablespoons of marinade for the sauce and refrigerate until you’re ready to make the sauce. Set the remaining marinade aside.
Cut the chicken into bite size pieces and skewer*. Skewer your chicken pieces on presoaked (in water) wooden skewers or metal skewers. Pour remaining marinade over chicken skewers being sure to coat thoroughly. (I use gloves, because the turmeric can stain your hands). Marinate chicken in the refrigerator for an hour.
2) For the peanut sauce, heat oil in a medium saucepan over medium heat. SautĆ© onions for 5-7 minutes. Add chili powder and the reserved 5 tablespoons of marinade, brown sugar, and ½ cup of water. Keep the pan over heat until very hot. Remove from heat and add peanut butter, carefully whisk until completely incorporated. Add additional water if the sauce is too thick. Loosely cover the pan and set aside. To warm the sauce, do so in microwave on 50% power for 30 seconds at a time and stir between. Heat until just warm. If you over heat the sauce, the oil will separate.
3) Preheat grill and cook skewered marinated chicken over medium high heat for 10-15 minutes. Serve chicken with peanut sauce and garnish with cilantro and fresh lime wedges. Makes approximately 32 – 6″skewers for appetizers or 8 dinner size portion skewers.*I like to skewer the chicken first before the marinade is added. It’s much less messy and when you’re entertaining, you won’t have to skewer the meat while you have guests. Again, I recommend using gloves.

Chicken Stew with Butternut Squash and Quinoa

I found this on pinterest, but it (along with the picture) comes from Cookin' Canuck. This was a nice new flavor. Don't skip the olives. You could make this vegetarian by using veggie broth and subbing white beans for the chicken.

Ingredients

  • 1 1/2 lb. butternut squash, peeled, seeded & chopped into 1/2-inch pieces
  • 3 1/2 cups chicken broth
  • 1 1/2 lb. boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 1/2 tsp kosher salt
  • 4 cloves garlic, minced
  • 1 1/2 tsp dried oregano
  • 1 can (14 oz) petite diced tomatoes
  • 2/3 cup uncooked quinoa
  • 3/4 cup pitted and quartered kalamata olives
  • Freshly ground black pepper, to taste
  • 1/4 cup minced fresh flat-leaf parsley

Instructions

  1. Steam the butternut squash until barely tender, about 10 minutes. Remove half of the squash pieces and set aside.
  2. Steam the remaining squash until very tender, an additional 4 to 6 minutes. Mash this squash with the back of a fork. Set aside.
  3. In a large saucepan set over medium-high heat, bring the chicken broth to a simmer.
  4. Add chicken thighs, cover, and cook until chicken is cooked through, about 15 minutes.
  5. Transfer the chicken thighs to a plate and allow to cool. Pour broth into a medium-sized bowl.
  6. Return the saucepan to the stovetop and lower heat to medium. Add olive oil.
  7. Add onion and cook, stirring occasionally, until onion is starting to turn brown, 8 to 10 minutes.
  8. Add minced garlic and oregano. Cook, stirring, for 1 additional minute.
  9. To the saucepan, add tomatoes, butternut squash pieces, mashed butternut squash. Stir to combine.
  10. Stir in reserved chicken broth and quinoa. Bring to a simmer, cover and cook until the quinoa turns translucent, about 15 minutes.
  11. Shred the chicken with your fingers or a fork.
  12. Stir the chicken, olives and pepper into the stew and simmer, uncovered, to heat, about 5 minutes.
  13. Stir in parsley and serve.

Pizza- even better

This dough is also from smittenkitchen. I finally buckled and bought some cooking wine to try this recipe, and boy am I glad I did. Last night's pizza was the best I've eaten in a long time, and although I did have some great toppings (like Trader Joe's quattro formigia shredded cheese, fresh mozzerella, and basil I grew myself), I really think the crust was the deciding factor. The first measurements are for "one small thin crust." I quadrupled it to make 3 large (12 inch?) pizzas which fed 6 adults, 4 toddler/preschoolers, and a baby. Adjust as you will.

6 Tbsp warm water
3/4 tsp active dry yeast
1/2 tsp honey
2 Tbsp white wine
1 Tbsp olive oil
1 1/2 C all-purpose flour
1 tsp salt

1.5 C warm water
1 Tbsp yeast
2 tsp honey
½ C white wine
¼ C olive oil
6 C all-purpose flour
4 tsp salt

Directions:
1. Dissolve yeast and honey in warm (100*) water. Let sit till frothy.
2. Measure out flour into large bowl and stir in salt. (I substituted one cup of white whole wheat flour in mine to no ill effect)
3. Add wine and olive oil to water. Add liquids to flour.
4. Use a spatula to stir it all up until it's clumpy, then use your hands to mash it all into a ball, making sure to incorporate all the floury bits.
5. Knead on a lightly floured counter/pizza peel until smooth and mostly uniform in consistency. (This shouldn't take long)
6. Oil the bowl your dough was in, roll the dough in it, and cover with plastic wrap.
7. Let rise until doubled, 1-2 hours.
8. Lightly press the air out of the dough and let it sit for 15 minutes or so while you prep your ingredients. Preheat your oven to 500* with the pizza stone inside it.
9. Roll out the dough on a lightly floured surface/pizza peel. Fold one side over and sprinkle the surface with cornmeal, then do the other side.
10. Add your toppings, and bake 10 minutes or until everything's browned and bubbly.

Here are some of my favorite topping combos:

For a traditional, tomato sauce pizza, I like to herb my crust. First, I lightly rub it with olive oil. Then I sprinkle on garlic powder, oregano, thyme, and sometimes rosemary. Then, I just use jarred spaghetti sauce and sprinkle some parmesan cheese on top of that rather than making or buying special pizza sauce.

Tomato sauce pizzas:

Fresh mozzarella, fresh basil, tomato slices, and bacon.

Fresh mozzarella, shredded sharp cheddar, bell peppers, red onions, olives, and pepperoni.

1/2 red sauce, half pesto, mozzarella, and italian meats.

White pizzas:

Alfredo, chicken, brocolli, or zucchini

olive oil, goat cheese, pear, caramelized onion. once you cook that, add fresh arugula, and candied pecans.

equal parts ricotta and sour cream, seasoned with salt and pepper, topped with bacon and caramelized onions

Other pizzas:

sour cream and salsa, topped with sharp cheddar cheese, grilled chicken, red onion, and grilled corn. once you cook that, add fresh cilantro and avocado slices

peanut satay sauce topped with mozzarella, grilled chicken, carrots, and onion. top with fresh cilantro.

Greek Chicken Wrap with Tzatziki Herb Yogurt Sauce

Sauce:
2 cups fat-free plain yogurt
1 cup peeled, seeded and diced cucumber
2 tbs chopped fresh dill (we used dried)
1 tbs lemon juice
1 tbs white vinegar
2 tsp minced garlic
1/4 tsp salt (optional)

In a medium bowl, combine all ingredients until blended. Sauce may be made up to 2 hours in advance. Cover and refrigerate until serving.

Wrap:
1 (6 oz) boneless, skinless chicken breast
1 ts light Italian dressing
4 (6 inch) whole wheat pitas
2 cups chopped romaine lettuce
1 medium tomato, chopped
1/2 cup sliced red onion
1/4 cup crumbled feta cheese
4 kalamata or black olives,pitted and sliced

Place chicken breast in a plastic bag and add Italian dressing. Let the chicken marinate for 15 minutes; pound using a meat pounder or mallet or the bottom of a skillet, and flatten to about 1/2 inch thickness; and remove chicken.

In a large non-stick skillet over medium heat, cook chicken about 5 minutes per side or until nicely browned and cooked through. Slice chicken thinly against the grain. Set aside. Assemble all other ingredients to your liking.

Aquarium Chicken Salad

Sam and I went to the New England Aquarium for our cousin, Crystal Stay Farrell's, wedding reception. They served salmon. It was really weird eating salmon in an aquarium.

BUT! They also served this delicious chicken salad. It was the best thing we ate all night. So, I tried to recreate it when I got home and came pretty close. I didn't measure anything, but it's easy enough to add stuff until you get the right proportions.

Mix together:
  • Chopped cooked chicken (I think I used rotisserie chicken)
  • Thinly sliced red onion
  • Thinly sliced celery
  • Craisins
  • Chopped pecans
Add enough real mayonnaise to make it all stick together, then add a little bit more.

Season with
  • Dill (this is essential. do not skip it.)
  • salt
  • freshly ground pepper
  • maybe a little bit of sugar? I didn't add this, but now that I'm thinking about it, it would have been appropriate.
Serve on oven-warmed croissants with a slice of lettuce.

Creamy White Chili

Creamy White Chili
7 Servings

1 lb cubed chicken (or 2 lbs)-- any left over chicken, especially rotisserie is good
1 med onion, chopped
1.5 tsp garlic powder-- we use fresh garlic
1 Tbsp vegetable oil
2 cans (15.5 oz) Great Northern Beans-- any white bean will work. we use 2 different sizes for variety
1 can of chicken broth
1 tsp salt
1 tsp cumin
1 tsp dried oregano
.5 tsp pepper
.25 tsp cayenne pepper
1 cup sour cream
.5 cup whipping cream

Directions
Sautee chicken, onion, and garlic powder in oil
Add beans, broth, seasonings, and boil
Simmer down for 30 minutes
Remove from heat, stir in sour cream and whipping cream

Serves 4

4 whole chicken legs (drumsticks and thighs), about 3 pounds total
1 tablespoon curry powder
2 pounds carrots, cut into 2-inch lengths, halved lengthwise if thick
1 cup brown or white basmati rice
2 limes, zest slivered and juice squeezed
Directions
1.Preheat oven to 475 degrees. Place chicken in the center of a large rimmed baking sheet; season with curry powder, salt, and pepper. Scatter carrots around chicken. Roast, occasionally brushing chicken and tossing carrots with pan drippings, until chicken is cooked through, and an instant-read thermometer inserted in the thickest part of thigh (avoiding bone) registers 165 degrees, 35 to 45 minutes.
2.Meanwhile, in a small saucepan with a lid, bring 2 cups water to a boil; season with salt and pepper. Add rice; return to a boil. Stir, and reduce heat to low. Cover, and simmer 18 to 20 minutes. Remove from heat, and scatter lime zest over rice. Cover pan, and let steam 5 to 10 minutes.
3.Transfer chicken to a plate. Sprinkle lime juice over carrots (still on hot baking sheet); toss, scraping up and incorporating any browned bits. Fluff rice gently with a fork; serve with chicken and carrots.

Chicken Enchiladas

What I use when someone in the ward needs a meal

Chicken Enchiladas

8-10 Flour Tortillas
2 (9oz) cans of Enchilada sauce
1/2 lb. Cheddar Cheese grated
1/2 lb. Monterey Jack grated
1/3 cup Green Onions chopped
1/3 cup Black Olives
1/4 cup Cilantro finely chopped
4 Chicken Breasts cooked and shredded
1 large spoonful of Sour cream

Mix cheeses, olives, green onions, cilantro, chicken, sour cream and some of enchilada sauce together in a large bowl. In a shallow dish (pie plate) pour the remaining enchilada sauce and dip tortillas in sauce and fill with filling; wrap up. Place enchiladas in 9x13 pan, top with any remaining sauce and cheese. Bake at 350 degrees for 20 minutes.

Lemon Yogurt Chicken

Lemon Yogurt Chicken-- from Lesli who got it from Genevieve

about 1 lb chicken--chop in pieces
coat with flour (in bowl)
butter in pan
brown chicken on both sides on high heat (about a minute or less)

reduce heat to low
add garlic (optional)
add plain yogurt (1 cup)
add outer part of lemon peel (grate it into the chicken)

(optional) add juice from lemon

optional --add herbs
add salt to taste (not optional)

you cook the chicken on low heat so it's tender, but make sure it's all the way or most of the way cooked before you add the yogurt because you don't want to cook it very long with the yogurt in or the yogurt will separate. It still tastes good but the texture is much worse.

Kung Pao Chicken



This is a GFCF recipe that Rachel's sister, Deb, sent us. Very delicious! (the recipe calls for pork, but we use chicken)

1/3 c water
1/4 c soy sauce
2 1/2 T sugar
1 T lemon juice (or 1/2 T vinegar)
2 T cornstarch
1/4 t dried crushed red pepper (we use cayenne)
2 T oil
3/4 lb meat cut into 1/2 inch cubes
2-4 large garlic cloves
1 red or green pepper cut into thin strips
1 small onion chopped
1/4 c unsalted roasted peanuts (optional)
Hot cooked rice

Combine water, soy sauce, sugar, lemon juice, corn starch, and cayenne in a small bowl, stirring with a whisk until smooth; set aside.

Pour oil into wok or large skillet, turn on to med-high heat until oil is very hot. Add pork and garlic; stir-fry about 3 min or until meat is cooked. Add pepper strips and onion; stir fry 3 min just until veggies are tender.

Stir in soy sauce mixture; cook, stirring constantly 1 min or until thickened. Stir in peanuts. Serve over rice. Makes about 4 medium servings

Southwest Pasta Salad

Sam's mom gave me this recipe and I love it. It's really easy to make and is great for potlucks. But be aware, the whole recipe makes a ton of salad. If I'm just feeding our family, I half the recipe and we still have leftovers. Anna likes it warmed.

I put *asterisks* around ingredients I usually leave out and {brackets} around ingredients I like to add

SOUTHWEST PASTA SALAD

Cook 1 pound tricolor pasta until al dente; do not overcook

In a large bowl, combine the pasta with

½ cup finely chopped red onions

*½ green pepper, finely chopped*

1 cup frozen or canned corn(I just use a whole can of corn)

¼ cup chopped fresh cilantro

1 small can chopped green chili peppers (sometimes I leave these out and it's still good)

1 15 oz. can kidney beans, or black beans rinsed and drained (I still use the whole can, even when I half the recipe)

4 ounces cubed or shredded cheese (cheddar, taco mix, or colby jack works well)

{half to a whole avocado}

{one or two tomatoes, or some salsa}

{one or two whole green onions}

{chopped black olives}

{some chicken that I stir fried in garlic powder, chili powder, and oregano)

Whisk together these sauce ingredients in small bowl and then pour over those in the large bowl

3 Tbsp olive oil

3 Tbsp chicken or vegetable broth

5 Tbsp white-wine vinegar

3 Tbsp tomato sauce (or spaghetti sauce)

2 cloves minced garlic

1 Tbsp chili powder

1 tsp salt

1 tsp dried oregano

Tortilla Soup, take one

My friend Marci brought her yummy tortilla soup to our Relief Society Super Saturday. I found the recipe on her menu blog and gave it a whirl. I'm a big fan. I really like that she uses canned chicken so there's minimal cooking, but there are enough spices to mask that unmistakable canned chicken flavor.


MARCI'S CHICKEN TORTILLA SOUP
1 T. olive oil
1 (12.5 oz.) can chicken (do NOT drain)
1/2 c. finely diced onion
2 garlic cloves
1 t. ground cumin
1/4 t. salt
1/2 t. chili powder
1/4 t. ground pepper
(I use "heaping" teaspoons when measuring the spices)
1 (14 ½ oz.) can chicken broth
1 (15 ¼ oz.) can corn kernels (do NOT drain)
1 (15 oz.) can black beans (rinse and drain)
1 (14 ½ oz.) can Mexican-style stewed tomatoes (cut up)
Toppings:
tortilla strips (see below)
fresh cilantro
diced avocado
sour cream
cheese

-Preheat oven to 425 degrees.
-Heat oil in pan over medium heat and sautee onion and garlic.
-Add can of chicken and spices (cumin, chili powder, salt and pepper).
-Cook 4-5 minutes, stirring frequently.
-Stir in broth, undrained corn, black beans and tomatoes.
(I like a little extra broth in my finished soup so I add some extra water, maybe 1/4-1/3 cup)
-Increase heat to high and bring to a boil.
-Reduce heat, cover and simmer 15 min.

While the soup simmers you can prepare the tortilla strips (or if you are pressed for time, just crush tortilla chips):
Using kitchen scissors (there is probably an actual name for them) cut tortillas into thin strips (I cut 3 at a time). Spread evenly in a lightly greased 9x13 dish.

Bake them in oven approx 4 minutes then stir them around and bake 3 more.

I often put them under the broiler for a couple minutes at the end to make them golden brown. Let them cool and harden, then serve on top of the soup with your other favorite toppings.
