Salmon and root Vegetables in Creme sauce

So sorry I didn't get a photo of this: it was delicious.

We have church from 2 to 5.  We usually get home about 6 or 6:30.  It is so nice to have dinner ready and hot.  But today's dinner was going to be salmon and I didn't want the fish overcooked.  

So, I cut up potatoes, peeled carrots and peeled sweet potatoes. I put them all in a bread pan and added 2 T olive oil, and some broth made with Knorr Delikatess Bruhe, a soup base made from all veggies and herbs.  I baked those covered with foil for one hour at 170 degrees C. 

Then I cut the salmon in half, laid it on the veggies, put some onion slices on top and replaced the foil.  This I put in the warm oven, but TURNED OFF THE HEAT.  And we went to church.
Upon arriving home, we found the salmon was perfectly cooked all the way through, not raw but flaky.  And really nice and moist.  I thickened the soup/sauce with  Saucenbinder (für Helle Saucen)  Gravy (for Light sauces), which is similar to cornstarch, but I don't think it is corn.  After it thickened, I removed it from the heat and stirred in 2 heaping T of Creme Fraiche.  Oh, my goodness. 

We are definitely having this again.

Slow-roasted Tomato, Cucumber, and Hummus Sandwich

Slow-roasted Tomato, Cucumber, and Hummus Sandwich

INGREDIENTS
whole wheat or multi-grain bread, toasted
hummus
carrot, grated
red onion, thinly sliced
sprouts
slow-roasted tomatoes (recipe below) or tomato, thinly sliced and seasoned with salt and freshly ground black pepper
cucumber, thinly sliced

DIRECTIONS
1. Spread hummus over two slices of bread. On one slice layer grated carrots, red onion, sprouts, tomatoes, and cucumber. Top with the second slice of bread and serve.

Slow-roasted Tomatoes

INGREDIENTS
cherry, grape, or small Roma tomatoes, halved
whole cloves of garlic, unpeeled
extra virgin olive oil
salt and freshly ground black pepper
fresh herbs (optional)

DIRECTIONS
1. Preheat oven to 225 F. Arrange tomato halves on a baking sheet lined with parchment paper. Drizzle with just enough olive oil to make the tomatoes glisten. Sprinkle lightly with salt and freshly ground black pepper and herbs, if using.

2. Bake in preheated oven for about 3 hours (depending on the size of the tomatoes), until the tomatoes are shriveled and almost dry (with a little juice still left inside). Use right away or cool and store in the refrigerator covered in a little olive oil.

Pizza- even better

This dough is also from smittenkitchen. I finally buckled and bought some cooking wine to try this recipe, and boy am I glad I did. Last night's pizza was the best I've eaten in a long time, and although I did have some great toppings (like Trader Joe's quattro formigia shredded cheese, fresh mozzerella, and basil I grew myself), I really think the crust was the deciding factor. The first measurements are for "one small thin crust." I quadrupled it to make 3 large (12 inch?) pizzas which fed 6 adults, 4 toddler/preschoolers, and a baby. Adjust as you will.

6 Tbsp warm water
3/4 tsp active dry yeast
1/2 tsp honey
2 Tbsp white wine
1 Tbsp olive oil
1 1/2 C all-purpose flour
1 tsp salt

1.5 C warm water
1 Tbsp yeast
2 tsp honey
½ C white wine
¼ C olive oil
6 C all-purpose flour
4 tsp salt

Directions:
1. Dissolve yeast and honey in warm (100*) water. Let sit till frothy.
2. Measure out flour into large bowl and stir in salt. (I substituted one cup of white whole wheat flour in mine to no ill effect)
3. Add wine and olive oil to water. Add liquids to flour.
4. Use a spatula to stir it all up until it's clumpy, then use your hands to mash it all into a ball, making sure to incorporate all the floury bits.
5. Knead on a lightly floured counter/pizza peel until smooth and mostly uniform in consistency. (This shouldn't take long)
6. Oil the bowl your dough was in, roll the dough in it, and cover with plastic wrap.
7. Let rise until doubled, 1-2 hours.
8. Lightly press the air out of the dough and let it sit for 15 minutes or so while you prep your ingredients. Preheat your oven to 500* with the pizza stone inside it.
9. Roll out the dough on a lightly floured surface/pizza peel. Fold one side over and sprinkle the surface with cornmeal, then do the other side.
10. Add your toppings, and bake 10 minutes or until everything's browned and bubbly.

Here are some of my favorite topping combos:

For a traditional, tomato sauce pizza, I like to herb my crust. First, I lightly rub it with olive oil. Then I sprinkle on garlic powder, oregano, thyme, and sometimes rosemary. Then, I just use jarred spaghetti sauce and sprinkle some parmesan cheese on top of that rather than making or buying special pizza sauce.

Tomato sauce pizzas:

Fresh mozzarella, fresh basil, tomato slices, and bacon.

Fresh mozzarella, shredded sharp cheddar, bell peppers, red onions, olives, and pepperoni.

1/2 red sauce, half pesto, mozzarella, and italian meats.

White pizzas:

Alfredo, chicken, brocolli, or zucchini

olive oil, goat cheese, pear, caramelized onion. once you cook that, add fresh arugula, and candied pecans.

equal parts ricotta and sour cream, seasoned with salt and pepper, topped with bacon and caramelized onions

Other pizzas:

sour cream and salsa, topped with sharp cheddar cheese, grilled chicken, red onion, and grilled corn. once you cook that, add fresh cilantro and avocado slices

peanut satay sauce topped with mozzarella, grilled chicken, carrots, and onion. top with fresh cilantro.

Curried Chicken Legs with Carrots, Rice, and Lime

Serves 4

4 whole chicken legs (drumsticks and thighs), about 3 pounds total
1 tablespoon curry powder
2 pounds carrots, cut into 2-inch lengths, halved lengthwise if thick
1 cup brown or white basmati rice
2 limes, zest slivered and juice squeezed
Directions
1.Preheat oven to 475 degrees. Place chicken in the center of a large rimmed baking sheet; season with curry powder, salt, and pepper. Scatter carrots around chicken. Roast, occasionally brushing chicken and tossing carrots with pan drippings, until chicken is cooked through, and an instant-read thermometer inserted in the thickest part of thigh (avoiding bone) registers 165 degrees, 35 to 45 minutes.
2.Meanwhile, in a small saucepan with a lid, bring 2 cups water to a boil; season with salt and pepper. Add rice; return to a boil. Stir, and reduce heat to low. Cover, and simmer 18 to 20 minutes. Remove from heat, and scatter lime zest over rice. Cover pan, and let steam 5 to 10 minutes.
3.Transfer chicken to a plate. Sprinkle lime juice over carrots (still on hot baking sheet); toss, scraping up and incorporating any browned bits. Fluff rice gently with a fork; serve with chicken and carrots.

Roasted Veggies

My new favorite way to eat vegetables is to roast them. I've used this method with sweet potatoes, carrots, parsnips, broccoli, zucchini, and asparagus. I really like it with broccoli and asparagus. It's like eating green french fries.

1) Preheat the oven to 400-425 (lower for green veggies, higher for starchy ones)
2)Chop up your veggies or trim the ends off the asparagus stalks
3) Drizzle with olive oil
4) Sprinkle with salt, pepper, and minced fresh garlic (1-4 cloves, depending on the volume of veggies you're working with)
5) Toss it all together till it's well coated
6) Place in oven for 10-20 minutes until veggies are browned and a little crispy, turning once or twice while cooking

Last night I made broiled steaks (see previous recipe) and just put the asparagus on the broiler pan with the steak. Even at the higher heat, they did just fine. Experiment with all your veggies! Make thin slices of sweet potato for home-made fries. Try sprinkling with some parmesan cheese or lemon rind/juice after cooking.

Pad Thai-- Gluten Free


I found this recipe at my friend Marci's dinner blog: On My Menu. She got it from Kill.The.Gluten blog and tweaked it. I like her additions (in italics) and have added my own (*starred*). The ease and deliciousness of this dinner have made it a regular at our house. The photo is from Marci who takes excellent pictures of all her dinners.

Ingredients:
1 box Original Pad Thai
2 boneless skinless chicken breasts, sliced thin---season with 1/2 t. each pepper, garlic salt, onion salt and 1 t. curry---*We have used either 1 lb shrimp or a mixture of shrimp and chicken. The shrimp makes it oh so rich.*
3 Tbsp oil, divided---I use 1/2 sesame oil, 1/2 canola or veggie oil---*I used peanut oil*
1 egg, scrambled (we like 2)
2 green onions, sliced
2 Tbsp cilantro, chopped
1 lime...optional (I forgot tonight and it still tasted great)
2 Tbsp peanuts, coarsely chopped
1/2 c. shredded carrots


Directions:
- Boil 4 cups water. Add the noodles and remove from heat. Let the noodles soak for about 5-8 minutes, then drain and run under cold water.
- In a large skillet, heat 1 Tbsp oil. Add egg(s) and cook until done. Remove the egg, chop, and set aside.
- Add the other 2 Tbsp oil and heat. Add the chicken (and carrots) to the skillet, cooking until just done, about 3-5 minutes. *If you're using shrimp, stir fry it 2-3 min on each side until it's done, then remove until the end. If you over cook them, they'll be rubbery*
-Add the noodles and the sauce packet. Stir fry for a few minutes, or until the noodles are done, adding water if necessary to keep them from sticking to the skillet.
- Add the egg, green onions, cilantro, and squeeze the juice from the lime over the top. Stir for 1 minute and remove from heat.
- Garnish with peanuts. (and some soy sauce if desired)

Chicken and Egg Fried Rice

Rachel's mom made this while we were there for Thanksgiving. It tasted good and looked really easy to make, so we got the recipe from her. Enjoy!


Nicean's Favorite Fried Rice

1 to 2 chicken breasts or 10 chicken tenders, cut into small pieces
8 baby carrots, finely sliced
1/2 white onion, chopped
3/4 cup frozen peas
3 cups cooked brown rice (use your favorite method to prepare this)
3 eggs, scrambled & chopped
1 to 2 garlic cloves, crushed or 1 teaspoon of garlic powder
1/2 stick butter, melted

Marinate chicken in soy sauce or if you don't have much time, mix chicken with soy sauce just before cooking. In a large fry pan, cook chicken in small amount of olive oil. Add carots and onion and saute until clear. Add frozen peas and cook until soft.
Add cooked brown rice to the fry pan mixture. Scramble 3 eggs, chop, and add to mixture.
Stir garlic into melted butter and add to the mixture.
Mix together well. Add soy sauce to taste.

Roasted Winter Vegetables

From Ina Garten's Barefoot Contessa Family Style: Easy Ideas and Recipes That Make Everyone Feel Like Family.

1 lb carrots, peeled
1 lb parsnips, peeled
1 large sweet potato, peeled
1 small butternut squash (about 2 lbs), peeled and seeded
3 Tbsp good olive oil
1 1/2 tsp kosher salt
1/2 tsp freshly ground pepper
2 Tbsp chopped fresh flat-leaf parsley

Preheat oven to 425

Cut carrots, parsnips, sweet potato, and butternut squash in 1- to 1 1/4- inch cubes. All the vegetables will shrink while baking, so don't cut them too small.

Place all the cut vegetables in a single later on two sheet pans. Drizzle them with olive oil, salt, and pepper. Toss well. Bake for 25 to 35 minutes, until all the vegetables are tender, turning once with a metal spatula.

Sprinkle with parsley, season to taste, and serve hot.

Serves 8

Use left overs to make Roasted Vegetable soup

*Heather's note: This is one of the tastiest ways I've ever eaten these vegetables. They also look pretty and smell great. I probably used more olive oil and completely forgot the parsley and it was still yummy.
